Our executive chef leads a brigade of 18. The menu is built weekly from what arrives at the harbour and the fields. No shortcuts, no trends — only produce, technique and memory.

You don't add to the product — you respect it.

Julian runs the pass every service: he sets the timing, guards the precision of every dish and makes sure each plate leaves exactly as intended. Sharp technique, a cool head and a standard that isn't up for negotiation.

An experience at TU.LUM does not end on the plate. Our floor team turns every service into a ritual: table reading, right timing, recommendations that tell a story, and a poise that is felt without being imposed.

Pairings curated with Maestrat sommeliers, signature cocktails crafted at the bar and a service that respects each table’s rhythm — for both intimate dinners and private groups.
